Calamari
Lightly dredged in seasoned flour and flash fried.
Served with lemon basil aioli.
Bruschetta
Thinly sliced tomatoes tossed with fresh basil, extra virgin olive
oil, minced garlic, red onions and
Parmesan cheese. Served on a grilled French baguettes and garnished
with balsamic glaze.
Beggars
Purse
Mushrooms, shallots and goat cheese wrapped in phyllo dough and baked
golden brown. Served with chorizo cream sauce.

Smoked Bayou Pork Loin
Tender loin cold smoked with hickory and finished on the grill.
Served with Bayou Hash - Red and
green peppers, charred sweet corn, chorizo sausage, cumin and
coriander.
Green Chile Chicken Roulade
Chicken breast rolled with minced red onion, garlic, Cotija cheese and
the worlds best green chiles from
Hatch, New Mexico, lightly breaded in panko and oven baked golden
brown.
Served with roasted cherry tomato veloute.
Four Cheese Spinach Manicotti
Pasta stuffed with fresh spinach, Asiago, Ricotta, and Mozzarella
cheese. Covered in a rich tomato sauce,
topped with Parmesan and oven baked golden brown.

poached in port wine with vanilla, star anise, clove, brown sugar and
